Kitchen Boss Season 2 Episode Party Bites

Raisin & Olive Tapanade recipes

Ingredients:

  • 3/4 cup golden raisins
  • 1/2 cup whole, pitted Kalamata olives
  • 3 tablespoons parsley
  • 2 tablespoons capers, rinsed and drained
  • 1 tablespoon olive oil
  • 1 teaspoon chopped fresh thyme
  • 1 orange, zested and juiced, plus extra zest for garnish
  • 1/8 teaspoon salt
  • 1 baguette, sliced and toasted
  • 1 whole clove garlic
  • 1/2 cup soft goat cheese
  • Strips of orange zest for garnish, if desired

Directions:

  1. In food processor, pulse raisins, olives, parsley, capers, olive oil, thyme, orange juice, grated orange zest and a pinch of salt together to form a coarse mixtures.
  2. Rub garlic clove on each crostini. Spread about 1/2 tablespoon of soft goat cheese on each Crostini. Mound 1 tablespoon of olive mixture on top.
  3. Garnish with strips of orange zest.
