Raisin & Olive Tapanade recipes
Ingredients:
- 3/4 cup golden raisins
- 1/2 cup whole, pitted Kalamata olives
- 3 tablespoons parsley
- 2 tablespoons capers, rinsed and drained
- 1 tablespoon olive oil
- 1 teaspoon chopped fresh thyme
- 1 orange, zested and juiced, plus extra zest for garnish
- 1/8 teaspoon salt
- 1 baguette, sliced and toasted
- 1 whole clove garlic
- 1/2 cup soft goat cheese
- Strips of orange zest for garnish, if desired
Directions:
- In
food processor, pulse raisins, olives, parsley, capers, olive oil,
thyme, orange juice, grated orange zest and a pinch of salt together to
form a coarse mixtures.
- Rub garlic clove on each crostini.
Spread about 1/2 tablespoon of soft goat cheese on each Crostini. Mound 1
tablespoon of olive mixture on top.
- Garnish with strips of orange zest.
